After a quick inventory of my refrigerator doors and drawers,
it was obvious to me that it was Soup Time!
I boiled a few potatoes from the bottom of the bag, sliced some zucchini,
and diced some onions. Covered them with water and boiled awhile.
I beat them with my hand beater right in the water.
Added some left over fresh corn, some tomatoes just little past slicing prime,
a handful of shredded cheddar cheese and a few pieces of bacon I'd browned in the microwave.
I had a partial can of evaporated milk so I added that to the mixture along with
a bit of salt and pepper.
The flavors will blend as it warms on the stovetop this morning.
Then I think I'll serve it in one of these tureens from my collection--thrifted, of course.
Yes, it is beginning to feel like soup time. I love it when the hot, sticky summer days begin to cool off and you can begin to think about warm comfy things again.
ReplyDeleteWe are far from autumnal temps down here, but soup is always good. Thanks for putting me "in the mood." Think I have a "stone" in the freezer to get one started. I always try to keep a soup bone in there, just in case. Hope all is well with you guys. Hugs, Linda@Wetcreek Blog
ReplyDeleteThanks for your well wishes. Our soup was delicious on this damp/rainy day!
DeleteSounds good! We are to be down to 45 Friday night. That is too cold too soon. I have beans and a ham chunk ready!
ReplyDeletesounds pretty good to me and either soup tureen will be wonderful
ReplyDeleteIt's almost soup weather , we are having temperatures end of week down to 49 from 100 yesterday
It's not cool enough for soup but I made it anyway. We love soup! Mine was just a simple cream of cauliflower soup but we ate it to the last drop!
ReplyDeleteThat sounds wonderful, Jeannie Marie! Our tasted so good, too. I'm not one to follow a recipe so don't know that I could ever recreate it exactly, but I could come close :)
DeleteI am ready for soup weather...I do not have a soup tureen to serve it in...Frank would faint...LOL I like the white tureen. very Autumn like :)
ReplyDeleteAs I suspected, I didn't bother with the tureens this time :)
DeleteJust catching up with you! And now, I want soup...
ReplyDeleteHi, Judy! It was SO good. I rather suspect there will be more soups to follow THIS batch...
DeleteYour soup looks and sounds delicious. We do soup occasionally no matter the weather. I don't have a tureen though.
ReplyDeleteDarla
As I suspected might happen, we didn't use a tureen anyway :)
DeleteYummy! Ohhh that would be so delicious on a day like we are having today. It is sunny but chilly outside. Your tureens are really nice, I need to get mine out.
ReplyDeleteHugs, Cindy
It WAS delicious, Cindy! (And SO good to hear from you, by the way.) Yesterday I made black bean chili. Used a recipe this time. It was delish, too.
DeleteYummy...and wonderful serving containers too!
ReplyDeleteLooks and sounds delicious, I received a soup tureen with serving bowls for my birthday a few weeks back, and I am so looking forward to using them. Thanks for sharing.
